Depends on the type of video I'm making.
With theme-based vids, I usually enjoy the intro - the first 20 seconds - and then the cutting/layers, just the arrangment of clips, breaks, shifts, transitions - the 'puzzle-making' part of it.
With story-based vids, my favorite parts are the eyes. Makes no sense? I like characters, they're my entire motivation for watching and working with anime. With story vids, those characters play the main role, and the one 'area' of the charaters that 'talks' the most to me is the eyes. I like the mood-matching of scenes, getting the characters to *look* like they feel what the song (and story) is saying. The cuts/shifts/puzzle-making blurs away as necessary but not nearly as important or fun as those eyes.
Given my preference, I like story-based vids more. I want to see the eyes, and see that they reflect the song. ^_^

I like exporting and filtering the best. I like the challange of making it look better than the DVDs, and keeping the filesize down. The editing is the biggest pain in the ass though. I made lots of mistakes in editing that I had to fix in my first video. That took a long time, but I like seeing the exported, filtered, and finished product.
