I use Premiere. There are three main ways that I do it.
1) put the whole episode on a track, scroll through and find the stuff that I like and clip it out, deleting the rest.
2) use the preview pane, clipping the stuff I like and moving it to the key scenes that I want
3)making tons and tons of clips, saving them and sorting them by length. Then I match appropriate scenes to my music like a puzzle.
Of course, the real problem is that I'm too lazy to polish my finished prouduct to the degree that it needs, so it always feel lacking to me.
Like everybody says... just DO it, and you'll figure out what works for you.
