Um...if they were worried about offending people, they would have left out a lot of the religious symbolism. People tend to be a bit touchy about that sort of thing. Yes, but people are more tolerant of religious symbolism than Nazism. Especially in the bible belt where I live. Also, the Manga came AFTER the Television series, thusly the Manga isn't necessarily canon material.
Secondly, the idea of haircolor in anime is a pretty stupid topic, since almost all anime features characters with very unnatural hair colors. For christs sake, Usagi from Sailor Moon was supposivly 'asian' by she was so blond and so blue eyed she could have givin Hitler a hard on. Not to mention the ammount of anime that features hair colors that don't even occur in nature!

Well forgive me if it wasn't aimed at me, but I only said an original script that predated the Anime script. Why they didn't use the script for Evangelion anime I don't know.
It's sorta public knowledge that there were more than one script for the series and for the movies as well.
As for the Rei/albinism arguement. The manga clearly says it's a possible explanation. In the end, it's all up to the viewer/reader to draw his own conclusions. There are no definite answers.

Where exactly does it say that, though...? Just out of the blue it provides possible explinations, or was it in the back with a bunch of weird stuff, or what? And also, what was the reason why they decided to put this kind of an explination in?

That may be, but I could've sworn I read that Sadamoto was writing (and drawing, duh) this one.
