A-Kon in Dallas is one of the largest cons in the country, and one of the longest running. I am planning on attending this year (barring any of the exciting events of 2009), so let me know if you are going. It's June 4-6. http://www.a-kon.com
Oni-Con is in Houston, and is a pretty good size con as long as the venue is the George R Brown convention center.... The Marriott this year was a big mistake. Since that one is local for me, I attend every year. http://www.oni-con.com No date has been formally announced for 2010, though it's usually in October.
I really don't attend the smaller cons in the area because of time and $$. If I'm gonna blow a wad of cash for a con, I want it to be in as big a crowd as possible. >.>

Since you're only about 1.5 hours from Austin, you may want to check out some of their venues too. I know there are plenty in San Antonio too - I guess it's all about how far you want to travel to see cosplayers.
