Cornwiggle - if it's one series, then use the second option and letterbox. Probably good if you are using a lot of scenes with subs in them.
If there are only a couple of scenes that you want to use that have subs in them, then crop and resize just those scenes, leaving the others at their normal aspect ratio. That will give you a prettier end piece.
