There's a few reasons for the total lack of non-canon/side characters in general.
Although, I can name a couple of "non-canon" videos I've seen made and posted on the org (usually involving yuri/Shoujo-ai though, and lets not even start on how many Death Note LightxL videos there are). I can also name a few videos dealing with side characters. (Maybe you aren't looking hard enough?)
A lot of people often get bashed for their non-cannon pairings. "That's not how the show really is, how dare you!" sort of stuff. So, I'd assume easily that some people tend to shy away from non-cannon parings for that reason. I think another reason would be because they don't want to misrepresent a show. Then of course the easiest reason to assume would be because the amv creator enjoyed the cannon/main couple more than the side characters.
There is also the case of competition. Lots of the members here compete at anime convention AMV contests. Most of the time those contests are judged by audience vote. Audiences tend to vote for their favorite show or favorite pairing (or the funniest) and it seems to me, cannon and main pairings are often more popular (unless your non-cannon video is absolutely hilarious, teh funny always wins).
There is also the difficulty in making side pairings, often times there's just not enough footage. This seems to be case for Air and Munto (in my opinion). Short series hardly have enough footage for the main pairing that making a side character video, or a non cannon video is really difficult.
If Air was as long as Clannad then I'm sure more side/non cannon videos would be floating around. I've seen lots of non-main story videos for Clannad, but that could be because the main chick kind of sucks in comparison to Fuko and some of the other characters. That and the couple of "add on" episodes at the end took a non-main story route (which is kind of cool considering the series is based off of a dating game).
TL;DR: Cannon/Main story is easier, and maybe the amv editors actually like them. Non-cannon/side characters are harder and have a greater chance of getting negative feedback only due to the pairing.
For me? I like to make videos with what I get out of the series. Very rarely do I fangirl about a series enough to get into non-cannon parings.

So, I probably should state that I'm reading Eclipse (part of the Twilight series). Just so when the complaints start filling my journal it's established ahead of time.
So far it's a bunch of "nothing's happening wtf how is this a story" but that was the majority of the last two as well, so I can't really bring myself to seriously complain about it.
Oh yeah, and Edward's still perfect or some shit as well... He finally has some facial features.. (WTF 3 books in? shouldn't we be getting this in like the fist one?)
I still say that he looks like Pattinson.. if Pattinson had more red in his hair.. but as long as the guy was white with high cheek bones the physical description would fit. I feel bad for Pattinson actually. He didn't know what he was getting in to, he just auditioned to hit on the girl in the lead.
Anyway, with this new description I keep thinking of that Sheamus (sp?) guy from WWE but skinnier and sparkley.. However I don't find that Sheamus guy attractive at all, and Edward is supposed to be "cream my panties super omg hawtt". I don't watch wrestling at all, however my sister's significant other does, so I've only caught it a couple times. Wrestling is not my flavor of entertainment O.o
Anyways, I'm only on Chapter 2. So there's plenty of complaints to come.
I'm really only wanting to finish the series because I started it. It's like a huge train wreck like watching the bad auditions on American Idol. I don't really need to subject myself to that, but the masochist in me enjoys the torture, the facepalms and the wtfs. Then I go and complain on the internet about them.
I'm not willing to pay "hardcover price" or even "gigantic book price" so I'm waiting for the cheap paperbacks to come out. I guess for the last one I gotta wait for the last movie.
I'm not too worried about the wait. I've read all the spoilers so I know that Bella ends up making baby with Edward and then Jacob goes all pedo for their poorly named child. (I swear that her name is more like a yuri pairing in fanfiction title than a name.)
Anyway, I'll leave it at that for now...
However, side note: how the fuck is it that her dad is so incompetent that he doesn't know to take the metal lid off of a jar before putting it in the microwave? I know boiling noodles is like serious hard (sarcasm), but for a grown adult in his mid 40s (I assume this is his age) he seems to have more cooking troubles than Scob. >.> The man can't even boil water and noodles O.o Scob can at least do that. -
