The way I don't end up quitting my projects is by constantly telling myself, "you're totally awesome, this video rocks!"
Seriously though, a video must have some goal or a point (whether that be to make it purely random action, or to have a punchline in the joke, it doesn't matter). And you just gotta realise that that point must be reached... Now if you had like some concepts, or new effects or just about any point in your mind which you have pictured happening in the video then that's what you push forward to achieve. What I mean is, say that in the first chorus of your song, you pictured a screen shatter effect mixed with a light source streaming from a fog behind with the main characters connecting fists at the same time, then you aim for that first chorus and make sure the lead up to it is perfect. And once you reached that first sign post you tell yourself, "you're totally awesome, this video rocks!"
Repeat and rinse till the video is done

Usually if i start to think what am i doing, or this is stoopid, i just save my work and then go and do something else. I'll come back a few hours or even days later and think, oh i remember that, and start working on it again. By working in short periods, you don't start becoming tired or bored and usually the video will be the same quality work throughout.

I have a couple of projects that I have on *cough* hold *cough* because editing them was like pulling teeth. It just wasn't fun anymore, and ripping out my har wasn't getting anything done (except making me bald).
However, if you have a clear idea as to what you want to have happen in a video, set aside some time that you know you won't be disturbed or have other distrations and just edit.
If you don't like the ending you have, then try something else. Often, the best solution happens accidentally!

If she tells me to finish stuff, I just finish stuff.
Otherwise, I tend to edit videos in a very short space of time so I don't really get a chance to slack off - by the time I get lazy, the video is done.

Obligatory Boobies would never have been finished without my wife contantly telling me to add more bouncing boobies.
Burning Love would never have been completed without Aiel Ileia constantly telling me to finish.
And so on.
Most of my finished projects are actually done as a way to avoid the thing that I should 'really' be working on. So, while I should have been working on my dramatic artistic revolutionary Mafia video, I was actually working on a fanservice vid.
Mostly: it's fun to have a finished project. I just try to remember that.
