Escaflowne. It's a bit more mainstream, but eh.
One that's almost completely under the radar (for now) is Tenjou Tenge. Personally, it's my favorite fansubbed series. It's licensed, and I'm waiting for the DVDs to hit shelves next spring.
Macross Zero is damn good (fansub). The ending was beautiful. Left me in tears.
Mai HiME is good too, hilarious at times. (Fansub).
Now, onto the more licensed stuff.
Kaze No Yojimbo. So unheard of, I think I'm the only fan sometimes. (R1 DVDs)
Orphen. Pretty unheard of as well. Cheap, too. 70 dollars for season one. (R1 DVDs).
