Once again, I'll say the only way you can get Vash to fight someone is if he's protecting others...
And don't use the excuse that he'd fight back cause he's a bounty...sure, he 'fought' Descartes and Ruth Loose, but that was in part because they were going to hurt Meryl & Milly...I mean, look at the first encounter with the Nebraska Family...an entire town hunting him...did he fight back? No, all the injuries were from things the townsfolk did trying to catch him.
As for Gofsef...again, he only hurt him to protect those women.
I said it before, I'll say it again, the only way Spike could drive Vash to fight him would be to start randomly attacking civilians...and frankly, I don't think Spike would resort to that (since, as far as he would probably be concerned, a bounty with no interest in fighting is easy money)
It wouldn't be a fight, it would be a massive chase
