Disney's classic stuff made use of it, but the use of rotoscoping in anime is pretty neat. One example I can think of is the opening for Legend of Black Heaven. It gets very little use but always looks cool.
Macross: Do You Remember Love? may be my all time favorite. Back in 1984 and it still is better than a lot of stuff since then. Then again, nobody has the budget to make such things anymore. Ahh....anime in the 80's was so wonderful.....and the 70's.....

I love what Gonzo has been doing in some of their latest series. Helling looks marvelously creepy. Saikano is a bit more subdued on teh CG but still looks nice. Gatekeepers 21 simply has some of the nicest, most detailed city scenes to grace anime. And well..... Last Exile, a complete contrast to Saikano, in the respect it is mostly CG but integrates fantasticly and just one of the nicest looking anime shows to be done.

Anything Sunrise is also lots of animation Eye Candy. Witch Hunter Robin is one I am just enjoying visually at the moment.

Also..... we have Ken Akamatsu mentioned and such but come on..... Yoshitoshi Abe has beautiful character designs. Lain, Niea, Hiabane and even Texnolyze are simply great pieces to watch flow on the screen. And few shows can match the subtle beauty that we see in Haibane.

For older anime. Have to go to the classics here with Ghost in the Shell and Akira. Love or hate the movies, they had incredible production quality. Pop in Akira today and it really doesn't stand out as being any older than much of the stuff coming out now. And that was in 1987-88, long before the CG made its way into anime.

I'm enjoying the 2D digital animation, but not when they apply 3D effects to it because most animation dosn't have the budget to utalize high end 3D CGI. The animation that was featured in 'Blood: The Last Vampire' was great, dispite the bad plot, as a Tech Demo it did show the future.

"Noiseman: The Sound Insect" is a good example of a mix of 2D/3D animation. A short film by Koji Morimoto and Studio 4c (with music by Yoko Kanno).

My bad.

Anime where the style and art impressed me?

Just about anything from Studio Ghibli, especially Kiki's Delivery Service. That has been around awhile and I still love to watch it.

Yokohama Kaidashi Kikou (Sony)

Everything I have seen from KSS studio

I'm going to cheat a bit and say what animation styles I *don't* like since I tend to like a lot of different types.

I don't like the way the characters are done in 'Grave of the Fireflies,' or in 'Hoshi no Koe' - that round faced character style, or in Love Hina or Fruits Basket, or Ah, My Goddess. I don't like the 'cheap looking' animation (whether it's cheap or not, that's how I describe it) in Ninku or Ping-Pong Club. Or the sketchy quality in the early DBZ sagas and the first VHD movie. And I don't like the odd animation in Saiyuki or FAKE where the characters look all droopy-eyed.

I do like some shonen styles - the more 'adult/children' style that clamp uses (where the kids look like kids and older people look like older people). I do like the animation in Tenchi (though it has that 'rounded' feel to it...), and Gundam Wing (similar, but the older people do have more definition). I like the variety in Rurouni Kenshin and VHD Bloodlust (the 'artsy' feel of it). And the slightly rounded (but different) style in Yu Yu Hakusho and HunterxHunter.

Mostly I look at characters, so it's all about how characters are done when it comes to animation styles I like.

DAMN! beat me to it, Studio Ghibli has some of the best animation ever. I also like the animation in Ah! My Goddess, but I am not sure what style that would be?

and btw, what is Shounen and Shoujo?
Look at me! Look at me! I posted in WOT so I must be evil!!! [/sarcasm]

Look at my new video!

Put as simply as possible:

shounen = geared more towards a male audience
shoujo = geared more towards a female audience
