RahXephon (just great)
.hack//sign (I'm not done with this but so far so good)
Eva ("mecha"/mind fuck)
FLCL (insanity/action/comedy)
Akira (Action ... and damn good action at that)
Cowboy Bebop (very good action, drop dead amazing soundtrack)
Escaflowne (roamnce/mecha/action, very good)
Love Hina (fan service/roamnce)
any Miyazaki films (amazing story telling)
Ah! My goddess (romance with some comedy)
Golden Boy (comedy ... and lots of fanservice and mockery of hentai)
Hellsing (action/horror)
Berserk (Gore galore and a very good story)
Nadesico (mecha/parody)
Onetai teacher (a pretty good romance/comedy)
Lain (uber mind fuck)
Trigun (comedy/action [the dub was casted entirely by satan])

some of these titelse aren't very easy to got a hold of ... like escaflowne ... but i like them all.
