If you remember, both he and Indiana drank from the Holy Grail, which gives them incredibly long life (if you remember The Young Indiana Jones Chronicles, Indiana confronts two kids in the '90s as a very old man). Henry Jones should live at least into the '60s or '70s.
Took the words right out of my keyboard. And really, there's no other actor the public could really imagine filling the shoes (and fedora) of Indy other than Harrison Ford. It's not quite like Bond in that the character is more remembered than the actor. For most people, Ford
is Indiana Jones. Try to cast another guy, and the movie won't do half as well.
Not to mention that Ford himself, though getting up in age, has still proven he can pull off his own stunts quite well. Take a look at
Air Force One (1997). He can still play a butt-kicking President of the United States. And if you want to go for a more recent one, check out
K-19: The Widowmaker (2002).
Finally, the Holy Grail was supposed to be the ultimate quest, to finish off the trilogy. Noah's Ark would be great, but it might be confused with the Ark of the Covenant (the first movie). What they need to do is bring up some old Nazi stuff. If you remember, they talked about Hitler's obsession with the occult, how he was collecting all of these historically significant artifacts around the world. What if the Jones family went out to find some of the missing artifacts that were lost after WWII? That would get pretty interesting, and offer a ton of opportunities for border patrol chases across East Germany (to rip off all the James Bond films).
Going on that premise (which would be duly awesome), I have a sneaking suspicion he might be after the Spear of Longinus. Hitler was rumored to have had possession of it, and after WWII, it was tucked away by Nazi soldiers until the early 90s. Not to mention after the Holy Grail quest, it would make perfect sense.
Another rumor I've heard is that he's after Excalibur. This also makes great sense considering the last movie ("The Arthur Legend. I've heard this bedtime story before" said to Walter Donovan concerning the Grail). And it'd be an interesting twist since Excalibur isn't really a religious artifact, but still a legendary relic (more to Celtic tradition than Christianity, really).
Either one would be interesting. But since the movie would be dealing primarily with the Cold War era, I don't really know. If I had to bet on one of the above, I'd go with the Spear of Longinus, though.
