Anime Music
There are so many contributing factors as to what makes a good anime great, and the music has a lot to do with that. Which ones do you think have the best music?
The top of the list for me is the soundtrack for Gravitation. It's extremely upbeat, very catchy, and does a good job enhancing the story.
2nd is Inuyasha and Hunter x Hunter. They have great intros and endings, and the background music fades in well and doesn't get repetitive.
3rd up is Kenshin, which has good music all around.

I don't listen to anime music that much,but some of the songs that I thought were cool enough to download (mostly opening and closing themes):
Jubei Chan The Ninja Girl opener and closer
X TV opener
Kodomo No Omocha season 1 and 2 openers
The "Noir" soundtrack. Although the series is utter crap in my eyes, the soundtrack is pretty sweet.
"Azumanga Daioh" has simple, but still pleasant, music.
And "Cruel Angel's Thesis", despite having strange lyrics when translated, is still one of the most tragic sounding songs in my opinion.
And that's that for now.

I absolutely love the Outlaw Star soundtrack. I play it in my car pretty much all the time. The Noir OST is quite good as well but I haven't seen the anime, so I don't really know if it "fits". The Kenshin soundtrack was pretty good, as was Macross Plus'. I liked most of the Gundam Wing music, but there were a couple songs I didn't like. Bebop music was very good, just not my "style". I like the Urusei Yatsura intro song, but none of the rest of the music really stood out.
I haven't watched much anime that I can remember the music to, so this is an incomplete list...

Just about anything by Yoko Kanno is excellent. She did Macross Plus, Escaflowne, Cowboy Bebop and I'm sure there are more that I can't think of at the moment...

Well, I never really bothered with the soundtrack, but I totally agree that the music is one of the most important elements of an anime. I haven't had too much experience with the japanese soundtracks, so the most I know would be the dubbed music.
Saying that, I really like the music for Escaflone, especially Dance of Curse. The music for Gundam Wing was also pretty good. And back in the day, I never really minded the soundtracks for the dubbed versions of Pokémon & Digimon.
And if we're even going to mantion video games, I definitely loved the music for The Legend of Zelda.

i liked alot of the music from gundam wing. my favorite anime opening theme is berserk just casue i like the song. oh yeah and the music from goemons great adventure beats all other songs i've ever heard
