You could almost so martial arts is a form of dance and use Ranma.

There's one in Gundam Wing, and if it doesn't have to be guy/girl there's a shoujo dance scene in Utena (the movie - not sure if it's in the series). And FF8's infamous dance scene if you include games...

Could you be a little more specific than 'dance'? I mean, like, ballet or Morris? Ballroom or club? Just happy dancers, or professional?

Because there's an awful lot of dancing out there, and I can't really recommend anything on that broad a query :S

Despite that, I'm going to say Princess Tutu anyway

FF8 has a small ballroom dance scene on it.

A few series with dance scenes in them :
Revolutionary Girl Utena (one of the earlier episodes had ballroom dancing, and the movie had a pretty long dancing scene)
Sailor Moon (either the S or Super S season had an episode with a formal dance)
Azumanga Daioh (a folk dance)
Saint Tail (another folk dance)
Full Moon Wo Sagashite (solo dancing onstage)
Jungle Wa Itsumo Hale Nochi Guu (a few different episodes, including a disco scene with Guu and Weda)
Super Gals (some fast-paced dancing)

Anyway, those are the ones I can think of right now.
