Hmmm...
Kon's done some excellent work, as have Miyazaki, Otomo, and Watanabe...but...at the same time, I'm tempted to try and break from the restriction to pull these two out of my geekhole
Yoshiyuki Tomino (Mobile Suit Gundam, Aura Battler Dunbine, Brain Powerd, Space Runaway Ideon) - If V Gundam has taught me anything, depressed Anno has nothing on this guy depressed

Shoji Kawamori (Macross: Do You Remember Love?, Macross Plus, Vision of Escaflowne)
...still...if I have to choose from that list...I'm prob. gonna go Miyazaki...as much as I loved the works of the others, still need to see more from Kon, and Otomo has the unfortunate habit of ending things often times on an awkward note (such as the case in Akira and Metropolis)

If anyone else has seen Cat Soup (or even if you haven't), I think Tatsuo Sato did a really excellent job with it. Especially considering it was his first film, it's really challenging and interesting. A little freaky.
I dunno, I'm not as down with what contributions are directorial and what falls to the rest of the staff as I should be to comment on this. :p
