Also, I can't omit a personal favorite - King Crimson's "Starless", a 12-minute ballad which spends its final 8 minutes as a buildup starting around single-note sequences.
The Birds are using humanity in order to throw something terrifying at this green pig. And then what happens to us all later, that’s simply not important to them…

I think you've already heard them, but Ayreon's "Day 20: Confrontation" and Pain of Salvation's "Iter Impius" both have amazing crescendos. Unfortunately I can't think of any more right now.
