I just use the record function in Audacity to copy streaming audio.
1. Get Audacity (if you don't have it)
2. Open it
3. There is one dropdown menu on the screen (usually says Aux Volume, or something of the like). Set it to "Stereo Mix"
4. Press Record
5. Play the video
6. Stop recording when it's finished
7. Cut out the blank space that comes before the audio
8. Export as (whatever your taste is)
And just do this for those sorts of video (for quotes and such), not songs, obviously.
