I generally try to work on 1 - possibly 2, depending on the circumstances - at one time. My reasoning is more for the fact that I have a hard time jumping between concepts easily, and keeping to one vid at a time helps keep focus (but also sometimes slows progress down to snail speed). Last year also really burned me out because of VG3, remastering an MEP track for a project that still isn't done (Project 5555), and working on the Nightwish project track I signed up for. I also spent time remastering old videos. The last full-length - as in over 2 minutes - personal video (that wasn't a remaster) I made is from Dec. 2004.
Currently, I have 2 I'm working on (one of which is for this weeks AMV Hell CE Match), 3 that I've started and put on hiatus, 6 that need full or partial remastering, 17 or 18 that need to be reencoded (all of the original encodes are hosted on Local, so they're a low priority), 3 - possibly up to 5 - that I want to remake (one of the 3 on hiatus was a failed attempt at this), and several original concepts in queue, including:
4 Eva videos, with a possible 5th and 6th (which will finally completely exhaust my desire to want to work with the source for several years, possible MEP ideas notwithstanding)
3 Mahoromatic videos
3 Elfen Lied videos
3 Fullmetal Alchemist videos (one of which is currently in-progress but stalled due to not having DVD #7)
3 RahXephon videos
1 Chrono Crusade video
1 Galaxy Angel video
1 Fushigi Yuugi video
1 Oh My Goddess! (OVA) video
1 Azumanga Daioh video
1 Bleach video
and numerous (>25) ideas for multi-anime videos or undetermined at this point.
That was just recalling them at the spur of the moment (assisted partially by using my digital music collection to jog my memory). I seem to remember there being 2 Chrono Crusade and Azumanga Daioh videos each, and there possibly being another RahXephon entry, but I can't remember the song at this point.
