When editing: 720x480 or, if I'm using a lot of still images, 640x480

For cons: 720x480 MPEG-2 with the 4:3 flag

For internet distro: 720x480 MPEG-1 with the 4:3 flag, 640x480, 512x384, 352x240 MPEG-1 with the 4:3 flag, and/or 320x240
