Ok, this is a very bad and very vague description.
It is 10yrs old (at the youngest) I'm not sure it was was Japanese but it was animation. There were 3 giant robots and 3 humans that powered them. They get transported through this tunnel thing and they go through stages(one of them being going down in a elevator?) the final being seated in their uniform and in their robot.

Damn...I don't think I'll ever find out...

voltron came to mind for me too, but it has 5 humans, and their robots are lions.

Hmm...it could well be Gekiganger III cos on the theme song, 3 is mentioned. I just can't really really convince myself cos screen shots are scarce.
One of the robots is yellow, the other blue and the main one (methinks) is red and black. They seem to merge together.
One of the pilots wear glasses and another has a big squady nose!
The enemies seem to have long green hair, a women with red and a guy with white long hair.
The yellow robot has drills on its feet and the blue robot has a water pistol!

How did I get so much info?! I desperately rummaged around the house to find a whole box of videos! So...tell me...is it Gekiganger?

It sounds like you're describing Starvengers... which was the American release of Getta Robo (if I am getting the name right)

Starvengers (just to use the US title) was about 3 characters who each had a plane and 3 Robots could be formed by docking the 3 planes together in different formations.

Again, using the American names...
you had Star Dragon - The Red one with the Axe
Star Arrow - Tall thin Blue One
Star Posieden - Underwater model with missiles on it's shoulders

Hope that's right...
