At this point it's way more beneficial for me to aim for quantity. I have too many video ideas started in the past that absolutely need to get fleshed out and removed from my plate. That isn't to say I don't want them to be good, but I'm certainly not sitting around pretending I'm making a universal opus that will end the need for further videos. Simply the process of cranking out average videos gives me a better sense of where I need to go that will eventually lead to quality. Typically "average" for me results in people saying they loved it, but 90% of the people here wouldn't give a second look cause they only talk about the heavyweights.
I typically don't ever make anything beyond the "this song would go nice with this anime" approach. If I do a good job editing it, then good for me. I'm never thinking of some epic monster that will appeal to fans of all ages, and I rarely consider using any songs that are popular. To some people a popular song + popular anime alone means quality, but not to me.
As Beo says, quality is only such for a few months if even a year, eventually what was considered amazing will completely fly past the more jaded next generation of editors/fans. Quality also falls prey to egos, people don't want to praise a really well done video cause it makes them look bad by comparison.

Ole' Zarxy spent 10 months on a Tetris vid which should be screaming quality, but it doesn't do shit for me in the way of entertainment. Add's prolly made more AMVs than anyone, and I don't like his stuff either. So if we go by my tastes, neither matters. Fun is the primary factor, baby. You can have the foxiest looking sack of ass on the planet earth, but if she just lies there doin' nothing when you're doing the linen tango overdrive on her, she's not worth the $6 of carbon atoms she's made of.
