Turns out that Anime North is going to be the same weekend that my prom is

What would happen if I entered my video but then didn't show up at the competition?

Check Anime North's AMV contest rules. Some contests don't care if you show up, but others do.

However, in my opinion, nearly any anime convention should take priority over something like a prom

Last year, they didn't care. One person was from Europe and he won a award

So I assume it would be ok
