Well, as always, it depends on your tastes.
My take?
I can't comment on Scryed too much as I haven't seen all of it. Granted, it didn't strike me as anything special from what I've seen, nor particularly impressed my brother who's watched all of it. It's an alright series though.
Most of anyone, with a few exceptions for real weirdos, likes Escaflowne. I really like this series; and I think it's well worth your time, whatever your actual preferences are.
Evangelion is a double-edged sword; by the time it's over, you'll either think it was a good series pointlessly wasted on artsy headfuck, or revere it as one of the awesomest things you've ever laid eyes on.
Firstly, you'll need some patience to get through some of the earlier episodes which might seem like just another run-of-the-mill mecha show with a really annoying male lead. The end will most likely freak you out, but whether that's a good thing or not is up to you.
There is some very intense action and intricate plot going on by late in the series, but no guarantee you'll catch on to it well.
Anyway, I strongly recommend Eva and Escaflowne, but you won't know if Eva was worth your time until you see it all

The Birds are using humanity in order to throw something terrifying at this green pig. And then what happens to us all later, that’s simply not important to them…

With Eva, I don't think it's a question of how smart you are, or whether you get it; there's plenty of intelligent people I know of who absolutely hate it, and probably for valid reasons. I think it's a great series, myself, but I won't claim it's true for everyone.
Lain? It's a good series, but it's, again, rather weird. Again, I really like it myself, and it seems to resolve itself nicely by the end.
Anyways, if you're up for a good time, good plot/characters and good action, I'd go for Escaflowne first, and then check out Scryed, too.
If you're up for something weird and artsy/deep, while Escaflowne is by no means a shallow series (far from!), I'd still go with Eva, and then try Lain.
