No one has mentioned Blade of the Immortal! It's the best manga out there. I am the very proud owner of all the volumes currently released in the US.
It is a bit explicit though. 16+ rating. But still the best manga out there. CLAMP is good stuff too but it doesn't compare with BOTI

You will not be disapointed if you buy this manga.

Manga which I think might be even better than their corresponding anime:
Neon Genesis Evangelion, Hellsing, Trigun, Love Hina (if you don't mind the hot springs nudity) (esp. better than the specials and OAVs)

Other manga I enjoy:
Azumanga Daioh, Kare Kano (it continues past where the anime stopped, WHOO!), Chobits (haven't seen the anime), Fushigi Yuugi, Kodocha, can't think of any more at the moment

agree on Snow Drop, very good, Chobits and Love Hina.

One of my all time favorites is Ceres; Cesestial Legend.

Planet Ladder, I.N.V.U., X/1999, Juvenile Orion, Hana-Kimi, Vampire Princess Miyu and I'll stop there.

How could I forget Onegai Teacher? I remember seeing the anime series and thinking how little filler there was compared to some other series I'd seen (like Love Hina). Then I read the manga and was quite pleasantly surprised to see that there was, somehow, even <i>less</i> filler there. Just a great story with no interruptions.
