Well, it's not like they "converted" the MIDI sounds, per se. This was performed with real live instruments, so they really could have arranged it with whichever instruments they wanted, guitars included. Force Your Way was more or less guitar-driven.
Also, you could compare the Guilty Gear X OST to the GGX Hard Rock Tracks.

From what I've heard, Uematsu wanted to keep it as close to the originals as possible so it would maintain that nostalgic value. But we're not really going anywhere with this. ^_^; You don't like prog, that's about it.
