The select profile wizard might be a good place to start.

Okay smartass, now show me how to disable b-frames without being limited to 176x144 resolution, 15 frames per second, and 128 kbps.

Oh wait a mintue, I found it. After disabling profiles, you have to click on "next" as if you're setting up a profile. My my, they certainly make this logical, don't they?
