Music is a tricky thing. But, as everyone and their cousin Jamie already said here, the key is going with what you like.
It doesn't always have to be a used/overused song - I mean it doesn't have to be Linkin Park to be unoriginal - put any sort of nu-metal-sounding music to DBZ/Trigun, stick a fast/hard rock'n'roll song into an action vid - not that they're neccesarily bad choices, but even if the songs haven't been used before, chances are - something along similar lines has already been done. It's still more original than an overused song though.
I'd judge originality this way: it's not neccesarily the song, it's what you do with it.
As for me, I'm pretty much chained to obscure music choices. I've been listening to mainstream rock radio at work lately, and I've been struck by how perversely wrong most of what they play sounds to me. It's not that it's bad music (actually, a lot of it is quite nice), it's just that I'm so badly out of tune with conventional stuff that I can't even stand listening to it for too long, let alone make AMV's to it. So... while I'm doomed to weirdness, it doesn't mean my music choices will always automatically equal originality.
