I was watching some anime with a friend lately, and his girlfriend also happened to be around. Now normally, she isn't that much of an anime fan, but that day we were watching Princess Mononoke, and while she normally allways just sits next to us, reading some magazines, this time she actually put away the magazine and started watching it with us.
So jeah, I guess Princess Mononoke would be a good candidate. It's well directed, the dub doesn't suck and it's thought provoking.
In any case, don't make him watch Eva. It's way too long, and the beginning doesn't really represent the series.

Mononoke was the first anime movie I showed to a bunch of people who'd never watched the stuff before. Since then, they've nearly all become rabid anime fans, so you probably can't go wrong with that one. 8)
For something more recent and not as violent, have you considered Hoshi no Koe? That one had a pretty good story and it's really not that long, so it could make a good introduction.

If he wants thought provoking you would be hard pressed to find a series that exercises (or kills) more brain cells then Serial Experiments Lain. It has the whole "this work itself is sort of a cultural war against American culture and the American sense of values we adopted after ww2" thing going for it, plus the added benefit of being relatively short.
Also Key the Medal Idol has some relatively deep themes to it.

Castle of Cagliostro is a good way to get people started as it's a very familiar style, but light-hearted and fun. Also, I support what has been said about the value of Princess Mononoke as an introductory piece. The differences from mainstream animation are there, but they're not enough to put him off.

SaiKano is good, but you would have to download it or get it from someone online. It's very depressing in that "We're going to fall in love in the middle of a war with an enemy who is never defined, and for some reason my shy cute girlfriend was turned into the ultimate weapon in order to protect us, but she has a mental and physical breakdown and everyone I care about dies in front of my eyes until the final day comes" anime style. Actually, it really is very good. The animation style takes some getting used to though.
