Escaflowne's Yakusoku wa Iranai - my classic favourite for reasons already mentioned.
.hack//tasogare udewa no densetsu's "New World" - nothing better than a weekly dose of chibi goodness!
Inuyasha's fourth (and current) OP with ELT's 'Grip!' - smooth animation, well put together.
Gundam SEED's third (and current) OP with 'Believe'

Favorite openings:
Mobile Suit Gundam (God...tis so campy...I love it!)
Overman King Gainer (dancing mecha...need I say more?)
Outlaw Star
Gundam X (Resolution opening)
G Gundam (all three openings)
Gundam 0083: Stardust Memory (For a series where I'll admit I found the majority of the cast a pain and found the story stretching at best, the intros were quite cool)
Shin Getter Robo OVA (aka Getter Robo: Armageddon) (both openings, each cool for their own reasons)
Read or Die
Heavy Metal L-Gaim (saw this in that video of two hours of mecha openings...with an intro like this, I REALLY hope this series gets licensed...
"Show me the way to you (Heavy metal) Lead me now where you are (Heavy metal)...")
Dragonball Z ("We Gotta Power" opening)
Cowboy Bebop
Evangelion
Zeta Gundam (both openings, although I prefer the second one)
and
Trigun
There's others I'm probably forgetting, but, ah well
