The 'bad guy,' Aboshi, flies a falcon in ep 11 or 12 of 'The Hakkenden.' I think it is shown close-up once or twice on his gloved hand; but he does ride (horseback) with it in one scene, and it is also shown in flight over a lush green valley.

There's a shot of a song bird sitting in a blooming tree with the backdrop of a village in one Inuyasha episode. But I doubt you want to use downloaded stuff, eh? In any case, I know it's the episode with Miroku's double in it going from town to town causing trouble - can't remember the name or number of it though.
Aren't there shots, too, of birds flying somewhere in Cowboy Bebop?

Hmm. Well, there's always Suzaku from Fushigi Yuugi. One of the very early UY episodes involves a sparrow/penguin, and at the beginning of UY movie, um, 4 I believe it was, there are a bunch of birds around either Lum or Ran (I haven't seen that in a loooong time...). A good 'bird in the hand' would be Hee from Jungle wa Itsumo Hale nochi Guu. On a much larger scale of birds, there's Macross Plus....
