Not technically what you're looking for, but R.O.D. the TV series has Maggie, one of the characters, create birds out of paper that they fly in.

Tsubasa Chronicle Movie...has alot of birds and ppl with birdlike features.

Also, DNAngel, the character Towa transforms to a pink little bird when startled...
