Any magical girl anime:
Sakura's key transformation for example, Ahiru turned into a duck in princess tutu (or duck turned into an Ahiru? >.>), Doremi can transform things in several episodes.

How about Yu Yu hakusho like when Yusuke fights younger Toguro in the end when they go all out that transformation was really good.
