Okay, can somebody give me a general outline of what all the AMV categories mean? I can't tell whether or not some of them would apply to a video that I'm making and would like it if somebody could tell me what has to be in the video for it to fit into whatever category.

I'm sure there was a listing somewhere around here...
Most are pretty self-explanatory, but in the meantime, I'll crib from the Recommended AMVs section's category descriptions.
Action: "These are often high-adrenaline videos featuring conflicts and/or dangerous and exciting events such as combat, chases and so on."
Character Profile: "... depict the actions or feelings of a character or characters from anime shows."
Comedy: "... designed to make you laugh."
Dance: "... are fun and upbeat - perhaps about dancing or good times. Sometimes funny but not necessarily comedy."
Drama: "... try to create a feeling of pathos or poignancy - e.g. a video about the theme of loss." ... "that express themes of tension, conflict or determination." ... "that have a positive or uplifting feeling, message or resolution. This does not include Romance videos."
Fun (aka. Upbeat): see Dance (minus the dancing, usually).
Horror: "... that are scary, gorey or in some other way intended to be disturbing or horrific."
Instrumental: "... that use music without any lyrics and create meaning without the assistance of words."
Other: "I am not sure what category it falls into." - Kwasek (from the video description)
Parody: "A parody, in contemporary usage, is a work created to mock, comment on, or poke fun at an original work, its subject, or author, by means of humorous or satirical imitation." (http://en.wikipedia.org/wiki/Parody)
Romance: "... that are about (or create) romantic stories or romantic relationships."
Sentimental: "... that contain sentimental themes - i.e. ones that are not quite dramatic and not quite romantic. These can be sympathetic or uplifting depending on the video."
Serious: basically, the opposite of Comedy and Fun. Related to Drama.
Trailer: "Trailers or previews are film advertisements for films that will be exhibited in the future at a cinema, on whose screen they are shown." (http://en.wikipedia.org/wiki/Trailer_%28film%29) Commercials and other advertisements fall into this category. Many of the AMVs in this category are also Parodies of actual trailers, but there are exceptions.
