I made my first video on a 1998 Sony VAIO with 64MB of ram and a 333mhz Intel Celeron processor running Adobe Premiere 5.1c. While I had access to JVC dual decks, and even a Play Trinity, they were not necessary for production.
And I bet you can certainly still successfully run Adobe Premiere 6.0 on whatever you have now. You may have really slow render times, but that doesn't mean you can't edit yourself, and you may have to deal with premiere locking up and crashing, so saving may be an every second enterprise.... but guess what? I did it back when there was no other option.
