Ninja Scroll and Elfen Lied, most definitely...I'm in agreement with just about everything posted here thusfar, so I'll only add a couple more...

I'd also suggest Judge (a 1 ep anime, about 45 min long)...has some great clips of eyeballs popping out, a guy's tongue being nailed through...oh yeah, and a character that chokes himself spewing blood...

If you can get your hands on Trinity Blood, there's some great clips in that too...people getting cut in half and tearing their own hearts out...not a bloody anime overall, but does have some footage worth looking at.

Baki the Grappler. Whoooo, this freaks me out everytime I watch it. I mean it has a bunch over starodic guys fighting like their in the flippin' Fight Club.
