There's quite a few computer scenes in Lucky Star, you could always try using special effects to make it look like they're editing an AMV. ^^

A couple episodes of ef ~a tale of memories~ has a kid that does a lot of shooting and editing video. You can even see Premiere and Photoshop on his screen at times. Not a lot of footage total, but still more than nothing.
