Technical issues with Xenosaga video

So, I followed the instructions for getting video off my xenosaga disk (episode 1, right now, but going to add the other 2).
I pulled them off with DVD Decrypter, saved them as readable isos, split them, and extracted all the video files as m2v files (couldnt find anything to convert pss files)
So, I started using my DVD2AVI program, and for a while it seemed to work... however, I currently cant perform a process with it that takes more than a minute and a half, or it freezes. some of the videos by themselves takes a couple minutes to do, not to mention how great it would be to bundle any of these 101 video files together. Anyone know what might be the problem? I'm not so computer literate as to know anything about this =(

And, problem #2:
If anyone here has made a Xenosaga (the video game, not the anime) AMV... do you know how to remove subtitles from the video clips? or are they stuck there? I'd hate to lose some great clips just because theres some annoying words at the bottom.
