Kratos could totally beat up your dad. With his own limbs. Unless your dad is Voltron.

Quickest and easiest isn't necessarily the best. The quickest and easiest way is to use avisynth to resize the video to where it's larger than than you really want the output to be be. Then crop out the subs by keeping only a section that's the size you need. Of course, you lose whatever was under the subs, plus some of the sides, plus you've now enlarged the picture to the point where it may look bad.
Better is to try and clip out sections from UNSUBBED fames, and mask those in to cover the subs up.

Well, he seems to be looking for quick and dirty. We'll be nice and assume it's time pressure, not laziness, ne?
And if you're using Premiere Pro, *that* is damned easy: Just get the track into the output monitor, grab the edge handles and resize it until you have a picture large enough so that an unsubbed section will fill your screen. Then grab the center handle and move it so that the section you want is centered. But I warn you - this is the "quickest, easiest" way but it's going to look awful: the fansubs are already compressed, and blowing them up larger is going to look bad, plus you're changing the composition of the scene like a pan-and-scan.
Let's assume that you're pure of heart, and you're only doing this because the series is so new or obscure that the DVDs just aren't available. Because if that's not the case, you want to rent or borrow them if you can't afford to outright buy them. If it is something where there just aren't DVD's, you won't find it easy to maintain quality. I gave into that temptation with my Madlax video http://www.animemusicvideos.org/members ... hp?v=82953 and you can see for yourself how miserable the video quality is.
