As a creator, it's easier to work with one series because I can focus on one or two subjects without the complexity of adding elements from a totally different anime.

But like AD says, what really matters is concept. If you have an idea that could work with multiple series - do it. Watch enough anime and you'll see there are a lot of similarities among them, no matter how different they may seem to one another on the surface.

As a viewer, I generally avoid watching/downloading vids that use "various" footage for much the same reasons I stick to using one title for editing. It's visually discombobulating and audibly incoherent with the music it's set to. But that's just based on the few I've seen. There are some VERY good ones out there, especially those that composite characters from one series with another. It's simply a matter of personal taste on my part.
