on-screen audio recording?
Could someone recommend a program for this along with anything else I might need to do? I tried using audacity, and either I can't set it, or else the recording sounds god awful no matter what you do. Volume changes that don't exist, panning left to right randomly, a constant static, and what sounds like stuttered random EQ effects. All this with me just sitting watching it record.

Try Harddisk Ogg (and yes, it records to WAV and such too).
