"St. Agnes and the Burning Train" by Sting. All acoustic, but you could do a lot with it.

"Force Marker" by Brian Eno (from the soundtrack to Heat)

'Marriage of Figaro' by Mozart and Beethovan's sixth are also good (classical music has the best instrumentals). Alternatively you might use the overture of a musical eg Phantom of the Opera.
