Encoding Help?

Hey I'm pretty newb here so bare with me. I don't know how to do things like encode one of my videos so that its size is under 2 gigs. I also don't know how to change the dvd codec to something that I can work with.

What I do know how to do is: Make a video and encode as a .gif animation

My problem is that I...
1) Am out of memory
2) Lost my Notepad & Adobe manual(s)
3) I can't give away any of my AMVs because I used fansubs instead of my dvds (my way to learning to edit + something to be proud of)
