BTW where you asking us to list explosions in Evangelion or were you saying your choice was the entire Eva series? I mean you your self have not even answered your own question. Sorta fan of the nuclear explosions that happen in anime because it reminds you of how destructive nukes are and the fact they are based on real life weapons is kinda scary. But you know, since hopefully we'll never see a real nuclear explosion in real life it's kind of neat to be able to see it animated. Couple of my favorites:
Genocyber vaporizing Hong Kong in a phoenix-shaped white hot nuclear-like blast, while giving an eerie cry of psychic pain and while sad orchestral string music plays. Followed by the words: In the year 20-something, Hong Kong was wiped off the face of the Earth.
Also from Gundam 0083: Stardust Memories. When Anavel uses the GP-02 to fire the Nuclear weapon at Pompeii Island, destroying so much of the Federation fleet that was gathered there for naval inspection. It reminds me of the bombing on Pearl Harbor for that reason. The words Anavel says before he fires is pretty cool too. I think the last phrase was "Solomon, I have returned!"
And a new explosion that's not nuclear related but is animated pretty niftily is during a dogfight in Macross Zero. One of the Veritechs changes to Battloid mode and enters "bullet-time" It then fires a round at an enemy fighter and tears away it's armor little by little until it explodes as it is ripped apart.

The purple ring explosion in End of Evangelion, you know, the one that looks like an eye when viewed from above.
Number 2?
The explosion when Tetsuo's bike collides with Numer 25's shield in AKira.
Number 1.
The second Akira explosion, this one just takes ages to happen and you can see it swallowing the entire city.
Okay, technically it isn't an explosion, but it looks damn nice.... and it doesn't use that cheap *shake-the-camera-to-imply-fake-rumbling* trick.
