I like Whisper of the Heart best. Then Porco Rosso and Laputa a close third. I also like Only Yesterday although I seem to be in the minority on that one. Oh well.

My favorite Ghibli film is the one I'm watching at that moment. But if I had to choose, I'd go with Whispers of the Heart followed by Pom Poko and Laputa (which, coincidentally, are the three I watched over the weekend...)

Actually, now that I think about it. Ashitaka shoots of a head and someone's arms in the first samurai battle. He gets another head and another arm, head by aroow, arm by... sword?(I don't remember.) Anyway, those are in the second samurai battle when he goes to check on Iron town. Lady Eboshi shoots off the Shishi god's head (poor guy), and Moro bites off Lady Eboshi's arm.
