None of these are mac software - these are all windows-only.

Mac the Ripper is essentially dead & buried. The Intel version has been an alpha and closed off to forum donators only for years now. Here's what we're left with:
http://thelittleappfactory.com/ripit/ (payware, $24.95)
http://www.macdvdripperpro.com/ (payware, $9.95)
http://www.metakine.com/products/fairmount/ (free, uses VLC's libdvdcss to rip)

Here's a neat audio editor that can actually do lossless editing ops on mp3 and aac, haven't seen anything else like it:
http://www.rogueamoeba.com/fission/ (32 bux)

For encoding, since x264 cli has libavcodec input and presets now, you really only need
$ port install ffmpeg-devel x264
Macports has a history of glacial package updates, but it's still better than the annual-at-best release cycle you get with Handbrake.

Yeah, I've used that before for recording Skype. But it lacks the awesome gimmick of lossless mp3/aac editing that Fission has, that's the part I've never seen in any other audio editor.
