i think seeing someone dance with castanets is pretty cool.

but for music that i would listen to on a daily basis, i'd say the piano for its versatility.

I don't have a straight-up favorite, since it really all depends on who's playing it.

For the sake of specificity, and because of the wonderful, fantastic & unusual stuff that its' most famous player does with it,

Of course, an inaccessibly expensive instrument for me, but a great machine that's easier to play and more versatile than just an average guitar.
