I wonder if we can cancel our *previous* Amazon pre-order of this and place a new one to get the discount... given that I don't think it's shipped yet.

If you pre-ordered on amazon, then they only charge you the lowest shown price since the time you pre-ordered. So there's no need to cancel and reorder.
