Hey, there's nothing wrong with you using those animes. They're overused 'cause they're popular and good footage material. If you like those shows and like editing them you shouldn't care about some "overused" crap. Sure, you might get lower originality scores, but originality isn't a deciding factor. If everything else is good and shows skills originality won't stop people from liking it  . On a side note why don't you try to pull off something unusual with those shows? A creator who uses "overused" animes, but manages to pull out something fresh, will get a lot more respect from me than the creator that picks the song and the anime from the deep pits of unseen/unheard.

As for other "not-overused" shows try:

X(tv)
Berserk
GTO(must see good videos on this)
Dragon Ball (Original)-I'm not kidding!
Kimi Ga Nozomu Eien
Mado King Granzort (this is an awesome AMV material show! It has everything in it.)

Those are all the shows I like but haven't been given justice in AMV's. I'd really like a good Dragon Ball (Original) video with DVD capture :) . On the other hand Berserk and GTO, which are my favourite shows, need more videos. So, whatever anime you use from above mentioned you can't go wrong  .

What sort of video are you looking to create? You could try Cardcaptor Sakura or Magical Project S if you have use for magical girls... :)

Oh, and try looking at this thread for some ideas:

I got my idea for my DOOMSAYER video like that.Watched Jin-Roh, then the first thing on my playlist when I opened Winamp was Hatebreed - Doomsayer. I was like "Perfect..!"

your second question answers the first. he's looking for recommendations of animes he hasn't seen because he hopes to come up ideas while watching a new anime.
