Azumanga daioh has a character riding a big white dog which, if looked at in a certain light, might pass as a sheep.

It's the episode where Sakura transforms the Erase card during the 2nd half of the series. Episode 52: Sakura's Sheep Warning?! or the 6th episode of this arc/season.

Also, I know in Digimon Tamers, they fight monsters based on 12 Zodiac animals and one of them is a centaur like sheep. I can send a clip if interested.

Escaflowne: the Movie has some nice big yak-like sheep that pull a wagon near the beginning.

Also, in .hack//sign, that thing looks way more like a cow than a sheep.

It didn't show up. Thanks though, I've got lots of good leads but that project will probably wait until after the first of the year right now.
