I've been pondering this questjion for a while, but I"ve come to no satisfactory answer. It seems that a fanboy or fangirl is someone who is extremely annoying to those of the AMV community. But I don't know the definition of a fanboy/fangirl. Can anyone tell me?

A fanboy is someone that will blindly follow something. For example a Nintendo fanboy might try to argue to you that Nintendo is the greatest thing ever and Sony and Microsoft suck. These are the types of people that would argue that games such as "Mario Teaches Toilet Training" is as mature a game as Metal Gear Solid 2.
Just using that as an example, I don't have anything against Nintendo, I love it myself.

My varieties of fan-specify gender:
The annoying moron: A fanboy or girl who likes something so much it is all they talk about, and they do it in a fast, annoying, "information blast" style. They typically are not very deep thinkers, and get excited by flashiness in a series. Or they take to calling each other "chan", "san", "sama", and "baka" if they are above the Dragonball level.
Then there is the character obsessed variety. They range from having a favorite (like me and my Urd enjoyment, or the people who have a casual like of "Tenchi Muyo"'s Ryoko), to idol worship (a la klinky and his Misato fixation), to scary (Mroni and Lum. Who isn't too shabby, but not the ultimate hotness Mroni hypes).
The casual fan: Most of us fall in here. Not obsessed or ignorant, just regular, harmless enthusiasts of the genre.
The elitist fucker: "Knows everything" about anime and will cut you down if you don't meet his standards.
That's all I can really think of.
